It has been a while,but still here Is a recipe suited for many types of food/ meal needs.

Ham and Cheese Casserole

Need to have:

8 slices slices of bread- cubed
1pack-mozzarella cheese- grated
4 eggs
1 tbsp onion powder
1/2 tsp salt & pepper
6 slices ham cubed
2 cups milk -low fat
1 cup bread crumbs

Grease a small square dish;

lay 1/2 of the bread cubes, ham, half of the mozzarella

Topped other half of the bread cubes

Beat together eggs, milk onion powder, salt and pepper

Pour over the dish, topped with the remaining mozzarella cheese
Finalized with sprinkling crumbs esp. Sealing the sides.

Bake for 20 minutes

Strawberry Muffins

Strawberry Muffins


Cupcakes version ( bake for 13-15 minutes)


Pan / dish version ( bake for 15-18 minutes)

Need to have:
1 cup white sugar
1/3 cup + 2 tbsps of veg. Oil
2 cups all-purpose flour
1 1/2 cups corn flour
1 cup sour cream
1/2 cup low-fat milk
*Corn flour mixture: 1/2 cup water mix with 2 tsps. corn flour
1 tbsp baking powder
1 /2 tsp baking soda
1/2 tsp salt
1 tbsp. lemon zest
1/2 cup strawberry jam/ preserves/ slices

How to :
Pre-heat oven at 190 degC (375degF)
Grease muffin tins/cups

Combine ingredients, use electric mixer to blend well and smoothly.
Scoop a teaspoon of strawberry jam and place each in the muffin tins.
Fill each muffin tins with the batter.
Bake for 13-15 minutes.

My Kind of Hash Casserole

My Kind of Hash Casserole


Need to have:
At least 2 cups of meat ( chicken strips, minced, cubes or even diced ham)
1 medium size onion -chopped
2 cups potatoes -grated
1 cup carrots – grated
1 cup -corn kernels
2 cups -mozzarella cheese -grated
2 tsps – salt
1 tsp black pepper powder
1 tbsp garlic powder
2 tbsps olive oil

Hot to:
Pre-heat oven 190degC (375degF)
Prepare an 8×5 baking dish- lightly grease
Place the meat (of your choice) in the dish
Pour over the olive oil and mix, enough to coat the meat.
Then, sprinkle with onion, grated potatoes and carrots (in layers)
Sprinkle with a dash of salt & pepper ( as desired )
then, the corn kernels
Top with mozzarella cheese
Finally, sprinkle with1 tbsp garlic powder, a dash of salt and pepper.
Cover with a sheet of tin foil .
Bake for 15- 20 minutes .

Dessert : Crunchy Blueberry



Need to have:
1/2 cup white sugar
1 1/2 cups all-purpose flour
1/2 tsp. baking powder
A pinch of salt
A pinch of ground cinnamon
A pinch of ground nutmeg
1/2 cup unsalted butter (softened)
Cornflour mixture: 1/4 water mix with 1 tsp. corn flour

1/4 cup white sugar
2 tsps corn flour
1 cup fresh blueberries

How to:
Pre- heat oven 190 degC (375degF)
Grease baking dish

Combine all ingredients until crumbly dough is formed.
Use 1/2 of the dough and pat on the prepared baking dish.

Combine toppings ingredients.
Sprinkle evenly over the dough.
Sprinkle the other half of the dough all over.
Bake for 15-20 minutes (until the top appeared a bit toasted golden brown )

Brunch with Pancit Bihon Guisado (Rice Sticks) and Zesty-Apple Cake for Dessert

~~>Pancit Bihon Guisado ( Rice Sticks)

Need to have:
2 tbsp. veg. oil
4 cloves garlic (minced)
1 med. onion (chopped)
2 breast fillet chicken (diced)
5 pcs hotdogs ( sliced )
2 med. carrots ( julienned )
1 small green bell pepper( diced)
2 pcs. green onions ( chopped thinly )
2 cups iceberg lettuce ( chopped thinly)

1 cup soy sauce
5 cups water
1 chicken cube
1tsp. black pepper powder
1pack rice sticks( pancit bihon)
1 small pack egg noodles

4 eggs ( boiled )
1 tbsp. lemon zest mix with 1-2 tbsps . lemon juice
2 cups iceberg lettuce ( chopped thinly )

How to:
Boil eggs and set aside
Sauté garlic, onion, chicken
Add hotdogs, then carrots
Pour soy sauce
Add in chicken cube, the 2 cups of water first.
Pour the rest of the water, simmer.
Then add rice sticks and egg noodles
Mix well, simmer.
Add in bell pepper, green onion and lettuce

Garnish then serve.

~~>Zesty-Apple Cake

Need to have :
1 apple – peeled,cored,chopped
1tbsp. All-purpose flour
1/4 cup white sugar
1 tbsp. lemon zest

1/3 cup veg. Oil
1/2 cup white sugar

*corn flour mixture: mix together in a small bowl
3/4 cup water
3 tsps. corn flour

1 cup all-purpose flour
1 tbsp. lemon zest
1 tsp. vanilla extract
1/3 cup milk (low-fat)
2 tsps. baking powder

How to:
Pre-heat oven 175 deg.C (350 deg.F)
Grease and flour a square dish / pan

In a medium bowl: mix together chopped apple, 1 tbsp flour,1/4 sugar & 1 tbsp. zest
Pour over the prepared dish/pan

In a large mixing bowl: combine veg.oil,white sugar using an electric mixer for 2 minutes until smooth and fluffy.
Add in the corn flour mixture, all-purpose flour, zest, vanilla extract, milk & baking powder.

Pour over the pan and bake for 20 minutes.
Let it cool down
To serve: Slice carefully, place on a saucer upside-down

Tea time anytime with Sugar & Cinnamon Biscotti

Need to have:
1/3 cup veg oil
2/3 cup white sugar
1 cup flour
1/2 tsp baking powder
1/4 water with 1 tsp corn flour
1 tsp vanilla extract
1tsp cinnamon
1/4 tsp salt
** 1 egg yolk

Sprinkle: 3 tablespoons of white sugar, 1 tsp cinnamon powder (mix together)

How to:
Pre heat oven- 165 deg C ( 325 deg F)
Grease baking dish
Mix all ingredients together (manual mixing using a ladle or spatula) EXCEPT for the egg yolk

Place the dough on the prepared dish and brush with egg yolk all over
Bake for 15 minutes, remove from oven.
Cut into strips carefully using a pizza slicer and move each piece to create space for the sugar sprinkles.
Sprinkle the sugar mixture on top and in between each strips.
Return to oven (no flame,heat from the previous baking temp. is enough)
Leave for about 10 minutes.

Beef Stroganoff Pasta

500 g. Penne pasta
.50 kg beef stroganoff
3 tomatoes (diced)
1 white onion ( chopped)
5 cloves garlic (minced)
1/4 cup olive oil
4 tbsps. Balsamic vinegar
1 cup water
2 cubes chicken bouillon
1 red bell pepper ( sliced)
1 cup cheddar cheese (grated)

4 corn pepper – freshly crushed
1 tsp. salt

Boil water for the penne noodles ( set aside)
Pour olive oil on a heated skillet
Sauté chopped onion and garlic until transparent
Then the tomatoes, then the beef, simmer
Add the chicken bouillon and water, simmer
Mix the vinegar, pepper, salt
add red bell pepper , press to crush carefully while mixing
Add in equal amount of penne noodles and mix until well incorporated
Topped with cheese upon serving

Option: toasted garlic bread
( unsalted butter, dried parsley, garlic powder)
Heat skillet
Place slices of bread until bottom is toasted ( as desired)
On a plate, place the toasted bread and spread on butter
Sprinkle with parsley, then garlic powder.
Slice into half
Serve hot & crispy

Snack Attack: Garlic & Cheese Loaf

You will need:

3 cups all-purpose flour
4 tsps baking powder
1 1/2 cups shredded cheddar cheese
3 tbsps. melted butter
2cups low-fat milk
1/2 tbsp. garlic powder
1 tsp. garlic salt
1/2 tsp. salt

How to:
Preheat oven to 200 deg.C
Grease a loaf pan

In a medium bowl, mix flour,baking powder, cheese & salt
Add in milk, butter, garlic salt & garlic powder

Place into the greased loaf pan.
Bake for 20 mins.

***Optional: you may glaze with Honey Butter:
1/4 cup honey +1/4 cup butter (softened)
Cream together.
Use a baking brush to coat the top layer of the loaf.
Return to oven (flame is turned off)

***Also, if you prefer just the cheese loaf, you may omit the #garlic powder and #garlic salt
